  • 1 lb chicken breast, thinly sliced
  • Salt and pepper, to taste
  • 4 slices bacon, chopped
  • 4 garlic cloves, minced
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta:
    • Boil fettuccine in salted water according to package instructions. Reserve 1 cup of pasta water and drain the rest. Set aside.
  2. Prepare the Chicken:
    • Heat olive oil in a large skillet over medium-high heat. Season chicken slices with salt and pepper, then cook until golden and fully cooked (about 6-8 minutes). Remove from skillet and set aside.
  3. Cook the Bacon:
    • In the same skillet, cook bacon until crispy. Add minced garlic and sauté until fragrant (about 1 minute).
  4. Make the Sauce:
    • In a bowl, whisk together eggs, Parmesan cheese, and heavy cream until smooth.
  5. Combine Ingredients:
    • Reduce the skillet heat to low. Add the cooked pasta, chicken, and sauce mixture to the skillet. Toss quickly to combine, using reserved pasta water to achieve the desired sauce consistency.
  6. Serve:
    • Garnish with fresh parsley and extra Parmesan cheese. Serve immediately.
