  • 200g (7 oz) streaky bacon, chopped
  • 2 medium courgettes (zucchini), sliced
  • 2 cloves garlic, minced
  • 200ml (7 fl oz) double cream
  • 100g (3.5 oz) grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook the Pasta: Prepare the pasta according to the package instructions. Drain and set aside.
  2. Cook the Bacon: In a large frying pan, cook the chopped bacon over medium heat until crispy (about 5-6 minutes). Remove and set aside.
  3. Sauté the Garlic: In the same pan, sauté the minced garlic for 1-2 minutes until fragrant.
  4. Cook the Courgettes: Add the sliced courgettes to the pan and cook for about 5 minutes, stirring occasionally, until tender.
  5. Make the Sauce: Lower the heat and add the double cream, stirring until heated through. Mix in the grated Parmesan cheese and stir until the sauce is smooth and creamy.
  6. Season the Sauce: Add salt and pepper to taste.
  7. Combine: Toss the cooked pasta into the creamy courgette and bacon sauce, stirring to coat evenly.
  8. Garnish and Serve: Top with fresh basil or parsley and serve immediately.
