  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon herbes de Provence
  • Salt and pepper to taste

For the Vegetables:

  • 4 large potatoes, chopped into chunks
  • 4 carrots, peeled and chopped
  • 1 large onion, quartered

Instructions

  1. Prepare the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Pat the chicken dry with paper towels and place it in a Dutch oven or deep roasting pan.
    • Rub the chicken with olive oil and melted butter. Season generously with garlic powder, herbes de Provence, salt, and pepper, ensuring the cavity is also well-seasoned.
  2. Prepare the Vegetables:
    • Arrange the potatoes, carrots, and onion around the chicken in the pan.
    • Drizzle with olive oil and season with salt and pepper.
  3. Roast the Chicken:
    • Cover the pan with a lid or aluminum foil and roast for 1 hour.
    • Remove the lid/foil and continue roasting for an additional 30-40 minutes, or until the chicken’s internal temperature reaches 165°F (74°C).
  4. Rest and Serve:
    • Allow the chicken to rest for 10-15 minutes before carving.
    • Serve with the roasted vegetables.
