    • 2 tbsp Jamaican curry powder
    • 1 tsp thyme (fresh or dried)
    • 1 scotch bonnet pepper (optional, for heat)
    • Salt and black pepper to taste

    • Fresh cilantro or parsley for serving

Instructions

  1. Prepare the Base:
    • Heat olive oil in a large skillet over medium heat. Add the onion, garlic, and bell peppers. Sauté for 2–3 minutes until softened.
  2. Toast the Spices:
    • Sprinkle in Jamaican curry powder and thyme, stirring for 1 minute to release their aroma.
  3. Make the Sauce:
    • Pour in the coconut milk and stir well. Add the scotch bonnet pepper, whole or chopped (optional), based on your spice preference. Season with salt and black pepper. Bring the mixture to a gentle simmer.
  4. Cook the Shrimp:
    • Add the shrimp to the skillet and cook for 3–5 minutes, stirring occasionally, until the shrimp turn pink and are fully cooked.
  5. Finish and Serve:
