Ingredients
- 1 ½ cups water
- 1 cup uncooked white rice
- 1 pinch salt
- 1 cinnamon stick
- 1 lemon peel (whole, removed before serving)
- 4 cups milk
- 1 ¼ cups white sugar
- Ground cinnamon for garnish (optional)
Directions
- In a large saucepan, combine water, rice, salt, cinnamon stick, and lemon peel. Bring to a boil.
- Reduce heat to low and simmer, covered, for about 20 minutes or until the rice is tender and water is mostly absorbed.
- Add the milk and increase heat to medium. Stir frequently to prevent scorching. Cook until the mixture thickens and rice becomes creamy (about 15–20 minutes).
- Stir in sugar and cook for another 5 minutes, stirring constantly.
- Remove from heat and discard the lemon peel and cinnamon stick.
- Serve warm or chilled. Garnish with ground cinnamon if desired.
