  • 4 large eggs
  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare the Sausage Gravy:
    • In a large skillet over medium heat, cook the sausage until browned and fully cooked. Remove and set aside.
    • Melt butter in the same skillet over medium heat. Whisk in flour until smooth to create a roux.
    • Gradually whisk in milk, stirring continuously until the mixture thickens and simmers. Season with salt and pepper to taste.
    • Add the cooked sausage back to the skillet and stir to combine into a creamy gravy.
  2. Bake the Tater Tots:
    • Preheat the oven to 425°F (220°C).
    • Spread frozen tater tots in a single layer on a baking sheet. Bake for 20–25 minutes or until golden brown and crispy.
  3. Cook the Eggs:
    • While the tater tots bake, fry eggs in a skillet to your preferred doneness.
  4. Assemble the Bowls:
    • Divide crispy tater tots into four serving bowls.
    • Top each bowl with sausage gravy, a fried egg, and shredded cheddar cheese.
    • Garnish with chopped fresh chives, if desired.
